  • Milk Oolong, also known as Jin Xuan or TRES No. 12, is a distinctive Taiwanese oolong tea celebrated for its naturally creamy and milky flavor and aroma. Developed in the 1980s by the Taiwan Tea Research and Extension Station (TRES), this tea thrives in the cool, foggy high-altitude regions like Ali Shan, Li Shan and San Lin Xi where the unique climate enhances its mild sweetness and creamy notes.

Jin Xuan's natural flavor profile does not require any additives to achieve its signature taste. However, some producers and vendors might add flavorings or additives to enhance these creamy qualities, creating versions that, while still flavorful, do not represent the true essence of Jin Xuan tea.

Authentic Jin Xuan Milk Oolong is renowned for its subtle, complex flavors and is often featured in tea tastings and special occasions, symbolizing Taiwanese tea innovation and agricultural excellence. When purchasing Milk Oolong, tea lovers should seek reputable sources that offer the unflavored variety to fully appreciate its natural qualities.

TRES No. 12, as Jin Xuan is officially designated, reflects its status as the twelfth cultivar developed by the Taiwan Tea Research and Extension Station. This naming convention helps categorize and reference the various tea cultivars developed by TRES for research and agricultural purposes, ensuring authenticity and quality in the market.

  • Cold Steeping Instructions

Cold steeping involves combining tea and cold water, allowing it to steep over an extended period. This method is ideal for green teas, white teas, light to mid oxidized oolong teas, and some botanicals.

    1. Measure:

      • Use 1 gram of tea per 2 oz of water.

    2. Combine:

      • Place tea leaves in a vessel and add cold, filtered water based on the ratio.

    3. Steep:

      • Refrigerate and steep for 4 to 24 hours. Use less tea for longer steep times to avoid over-extraction.

    4. Strain and Serve:

      • Strain the tea leaves and serve over ice or as is.

    5. Enjoy:

      • Relish the refreshing and flavorful cold-steeped tea, perfect for any time of the day.
